Hey crew — here's how we run pizza night. Four of us, one oven, one topping table. Keep the oven busy, keep guests moving, and try not to all stand in the same spot.
Stick to your job. Help each other when it's slow.
The oven · Tom brings the wood
Get the oven going and keep it hot. Put pies in, take them out, cut them, and yell the guest's name when a pie is ready. Tom also prints the big sign and the order forms ahead of time.
Orders + toppings
Set up the order table and the topping table together. Say hi to guests, help them order or build a pizza, keep toppings filled, and bring finished pies out when Tom or Jay calls a name.
Work backward from when Frebella opens the doors. Times are a guide, not a stopwatch.
Print the station sign and a big stack of order forms. Bring pens that work.
Two minutes. Tom & Jay: who starts on the oven? Anni & Jen: who says hi first, who builds first? When a pizza comes out, yell the name loud enough for the room.
Anni or Jen greets people and explains the two options (point at the sign). If the oven isn't ready yet, smile and say “two minutes.”
Don't let the oven sit empty if pizzas are waiting. Don't leave guests standing with no one to help. Tom & Jay can switch oven duty every half hour or so. Anni & Jen switch between orders and toppings as needed.
About 20 minutes before you want to stop, say “last dough.” Finish every pizza already started. Pack up cold food first. Move the oven last, once it's cool enough.
Same food either way. The only difference is who puts the toppings on.
Guest grabs dough, adds toppings at the table, then hands it to Tom or Jay.
Guest fills out an order form (or tells Anni/Jen what they want). You build it, oven bakes it, we call their name.
Same steps every time. Don't forget the name.
Keep these separate so you're not bumping into each other all night.
Anni & Jen
Where guests stop first. Sign up. Stack of order forms. Pens. Get the name and what they want before anyone touches dough.
Anni & Jen
Where pizzas get built. Dough, sauce, cheese, toppings. Flour for sticky hands. Parchment under every pizza. Extra toppings under the table. Try to keep one of you facing new guests so nobody feels ignored.
Tom & Jay · Tom brings the wood
Just for oven people. Wood nearby. Clear floor. Spot for hot pizzas. Knife ready. Spot to set finished pizzas while you wait for someone to pick them up. Anni & Jen stay at the tables unless Tom or Jay asks for help.
Have more people choose “we build it.” One of Anni/Jen takes orders, the other builds. Tell people: “About five minutes once it hits the oven.”
That's normal. Don't build a huge pile of raw pizzas — three waiting is enough. Anni & Jen can refill toppings, talk to guests, or bring pizzas out so Tom & Jay can stay on the oven.
One person grabs more from under the table or the cooler and says what's out. Don't both dig for the same tub.
Switch between pizzas. Drink water. Tom & Jay should trade oven time so nobody stands in the heat for two hours straight.
Wash your hands. Tie hair back. Keep raw dough on parchment. Keep the order form with every pizza. Say “hot behind” if you're walking with something hot. If you're not sure a pizza is done, ask Tom or Jay.
This is a plan, not a law. Change it once you see how the night is going. You've got this.
see you at the folding table
